What I Ate Wednesday {9}

I had every intention of getting this post published last night, but exhaustion set in and I went to bed instead.

Love your veggies- didn’t happen. It’s clear I need more vegetables in my life!

Breakfast:

Since my blood sugars have been so insane lately, I’m trying to change things up with my meals in hopes it will bring my sugars back to down to normal levels. It’s not working. No matter how much insulin I take, no matter how little carbs I eat, the levels keep rising.

Snack:

Delicious and crazy juicy orange, along with roasted peanuts.

Lunch: 

Hey, look! Vegetables! My all time favorite soup.

Dinner:

A low carb wrap filled with cheese and salsa, dipped in spicy guacamole

And a new to me yogurt. Not bad, but I wish the cup was bigger!

What I Ate Wednesday {4}

It’s that time of the week again! I love this day on my favorite blogs, so many new ideas to add to our menus! Let’s get right to it.

Breakfast: It has been COLD here the last few days. I would much rather have this though, then sweating in 100 degree weather. It’s always easier to add more layers, but there’s only so much you can take off. This morning I had oats with crunchy nut butter and then a yogurt.

Lunch: I went to a friend’s house for a brunch which turned into my lunch, my contribution was this yummy egg and canadian baked dish and hash browns. We also had some blueberry muffins that were incredible. It just a laid back morning and we sat around and talked while their kids played and I snuggled with the sweet little 6 month old that was there. I can’t believe I’m going to have a little baby again…and soon!

Snack: My favorite; the mug cake. I have mentioned this so many times over the last week, but I’m not kidding, I ate least have this every other afternoon.

Dinner: Spaghetti! I  needed some vegetables in me (and baby girl) tonight, so I added a cup of steamed broccoli.

Ending with the hump day bump day picture, here we are at 21 weeks and 4 days.

Mug cake and taco night

I couldn’t think of a good title for the post tonight, so I went with my two favorite things from today.

Breakfast:

The usual favorite: scrambled eggs, hash brown, canadian bacon and 1/2 a grapefruit. I absolutely LOVE grapefruits, the tangier and sour(ier?) the better!

Since Aiden was supposed to be our last child, as he has grown up, I’ve donated or sold all things baby, which means we are starting completely over. I don’t want to spend a lot of money on everything, because the paperwork has already been signed to get my tubes tied, so this one is for sure it…but she can’t spend her life in nothing but cloth diapers and a few onesies. I have driven by this store a bunch of times, but today I ventured in. Baby mothership.

I was in love. Rows and rows of baby and children’s clothes, maternity clothes and almost every baby supply you can imagine. I almost picked up a diaper bag and boppy, but remembered I was just browsing today and finding some Christmas gifts for the other kids (which I did find a few of us as well!). I can’t wait to really go shopping in this store, holding off until January before we start shopping for this little one.

Snack:

I mentioned this on the WIAW post from yesterday, but I had it again and it should be mentioned again based on how absolutely delicious and amazing it was! Here’s the recipe again for you. The best part was how filling it was! Based on this meal plan / insulin regime I’m on, about 2 hours after a meal, you better feed me or I’m going to eat someone. But after this snack, it was nearly 4 hours before I felt the tiniest bit hungry. HOLLA!!! #winning

Dinner:

You can’t go wrong with taco night around here; kid and parent approval. I do the base of the corn tortilla, beans and cheese in the oven and then everyone can top their own. Usually the kids will leave them with just beans and cheese, I only added spicy guacamole to mine tonight and they were amazing.

What I Ate Wednesday {3}

It’s that time of the week again, What I Ate Wednesday! I love looking through all of the other entries, gathering meal and snack ideas for when I’m stuck eating the same things over and over again.

Breakfast:

Scrambled eggs, hash brown and an orange.

Snack:

I saw this recipe here and knew I needed to make it ASAP. I made mine with white chocolate chips because that’s what I had in the house, but let me tell you, this is amazing and you should make one. I will be having another one tomorrow and probably every day until I get sick of them.

Lunch:

Two leftover slices of pizza from dinner last night. Apparently my body was not a fan, because even though I gave myself enough insulin to cover the pizza, it was still way too high after that. Lesson learned.

Dinner:

I thought I was ready to cook and eat chicken again. I haven’t been able to eat since the day I got a positive pregnancy test, but it sounded really good. About 1/2 hour into the chicken cooking, I knew that I wasn’t going to be eating it. It still smells in the house and it’s making me so nauseous. Instead, I made a simple wrap with cheese, 1/2 a grapefruit and a yogurt.

Since today is also hump day, bump day; here’s a shot of baby girl at 20 weeks and 4 days. As I was going through the pictures on my phone I saw that I was wearing the same shirt at just 5 weeks pregnant. Amazing how fast the body changes!!!

 

 

What I Ate Wednesday {2}

Here we are, time for another WIAW post. Today was spent at my mom’s house doing some Thanksgiving prep work for tomorrow.

Breakfast this morning was scrambled eggs, a hash brown and 1/2 a grapefruit. I try to not eat a high carb breakfast and it seems to keep my blood sugars a little more stabalized during the day.

Snack was a Kind bar and an apple, I have been so hungry today, I can’t get enough food in me!

I honestly can’t remember what I had for lunch, but I know it was pretty much just snacking throughout the afternoon. I made a bunch of dishes for tomorrow’s feast, but my favorite thing to make every year is this Creamy Pumpkin Trifle. I found it on Dashing Dish about 3 years ago, and I have made it every year, it’s a family favorite and tradition now.

Dinner was oh so amazing. My Mom treated us to my favorite Mexican restaurant and the steak fajitas were everything I imagined they would be.

I hope everyone has a very Happy Thanksgiving and it’s a day filled with friends, family, good food and counting your blessings!!!
