What I Ate Wednesday

I haven’t participated in awhile, but since my posts are pretty much once a day now that my sister has joined with me, I am excited about doing WIAW posts again!

WIAW GOES GREEN

Breakfast was 2 hard boiled eggs, toast and a banana

And my new morning ritual; hot lemon water

Lunch was leftover salad from the night before. I put it in a mason jar in the fridge and was surprised that it stayed crisp, normally I despise leftover salads because everything gets all soggy, but this was like I had just made it. Mason jars, for the win!

After T and K got out of school, we headed over to the park for some fun in the sun. I’ve tried many coconut waters over the last couple of years, and really have not been a fan. I spotted a new one in Target the other day and decided to give it a try.

I am in love. I drank this as fast as I could, I was kicking myself for not buying more!!

Lunch:

Open faced sandwich,  one side with jalepeno hummus {SOO good}, tomatoes, bell peppers and muenster cheese

And the other side was jalepeno hummus and muenster cheese. You’ll notice sprouts on both sides, but after one bite I threw it away. I felt like I was eating grass. No thank you.

Dinner:

Annie’s shells and cheese, Hot&Spicy primal strip and vegetables mixed in.

What I Ate Wednesday {First Snowfall}

It’s been a few weeks since I have participated in the What I Ate Wednesday link up party, because I always forget until it’s too late!

Yesterday we were under a winter storm watch, but before the snow arrived, it rained all.day.long. We now have a frozen lake in our back yard, but at least the inside of the house is dry!

I don’t have much for food pictures, but I did manage to take a picture of dinner last night

I can’t wait to turn on our Christmas lights tonight and have the snow glowing with the lights, it’s magical.

Happy 40th Birthday What I Ate Wednesday! I haven’t been participating as long as it’s been around, but it’s a day I really look forward to! I love reading everyone else’s entries and meals other people come up with.

Breakfast:

Unpictured (mass amounts of water, I’m drinking a big mug of water about every hour and it’s really helping control my hunger during the day.)

Lunch:

  • Whole Wheat English Muffin (3P+)
  • Trader Joe’s Veggie Masala Burger (3P+)
  • Weight Watcher’s Swiss Cheese Wedge (1P+)

These veggie burgers are so good, I love the bits and pieces of real potatoes and vegetables in them.

Ended my lunch with a pear for dessert. I think this would have been better with a sprinkle of cinnamon on top, but I’ll remember that for next time.

  • 1 Tbsp. Chia Seeds
  • Sliced Banana
  • Artisana Walnut Butter

Lunch:

Roasted Potato Skins (Inspired by Danica’s Daily’s Potato Skins)

  • 1 potato sliced and roasted
  • 1 chopped turkey sausage
  • Plain Chobani
  • Trader Joe’s Hot Pepper Jelly
  • Kraft 2% Sharp Cheddar Cheese
  • Scallions

Make.This.Now. Seriously, so dang good!!!!

Dinner:

Phew! What a day!! It’s time for another round of What I Ate Wednesday!! I’ve held off on posting all day today so I could have a real entry of what I ate today.

I saw these refried bean flautas on Snack Snark Bark. She always has amazing meals and when I saw these, I knew it was only a matter of time before I would be making them. Mine did not turn out nearly as pretty as hers did, but I assure you, they were absofreakinglutely delicious and I will be making them again!!!

  • Refried beans with green chilis (3P+)
  • LOADS of salsa.

The spicier the better!

For dessert, I had a kiwi.

Celebrating one of the glorious things we all have in common: We all eat!

A great reminder of what WIAW is all about!!! I have been trying to figure out how to continue doing the WIAW posts since I post a few times a day anyway about my meals, so I’ve decided to stop thinking so hard about it and just post the meals in between the last time I posted. Most of the time it will be probably be one or two meals, but I’m just keeping it real!!

Breakfast:

Jay Robb vanilla protein shake mixed with 1 cup of Silk Vanilla Light Soymilk.

Snack:

An apple the size of my child hand.

Since I didn’t have eggs for breakfast, I was craving them all morning, so I decided to have them for lunch.

  • 2 Eggs (2P+ a piece)
  • 2 slices whole wheat toast (2P+ a piece)
  • I Can’t Believe It’s Not Butter (3P+)

With some greens to vegg my lunch up a bit.

I added 1 teaspoon of canola oil (1P+) and seasoned with sea salt and pepper.
