What I Ate Wednesday {9}

I had every intention of getting this post published last night, but exhaustion set in and I went to bed instead.

Love your veggies- didn’t happen. It’s clear I need more vegetables in my life!

Breakfast:

Since my blood sugars have been so insane lately, I’m trying to change things up with my meals in hopes it will bring my sugars back to down to normal levels. It’s not working. No matter how much insulin I take, no matter how little carbs I eat, the levels keep rising.

Snack:

Delicious and crazy juicy orange, along with roasted peanuts.

Lunch:

Hey, look! Vegetables! My all time favorite soup.

Dinner:

A low carb wrap filled with cheese and salsa, dipped in spicy guacamole

And a new to me yogurt. Not bad, but I wish the cup was bigger!

Don’t forget to check out all of the other submissions for this week’s WIAW!

What I Ate Wednesday {8}

It’s that time of the week again! Time to link up and share food for WIAW. I love reading blogs on Wednesdays, so many new recipes and meal ideas, and today has been no exception.

Let’s get right to it!

Breakfast:

When I find something that tastes delicious and doesn’t make my blood sugars soar, I tend to stick with it until I get sick of it. Lately it has been cinnamon raisin english muffins, topped with crunchy nut butter and then an orange on the side.

Lunch:

Pretty sad that I couldn’t remember what I had for lunch until I went back and looked at the pictures from today. #pregnancyproblems. Pregnancy brain is for real. I had an egg sandwich and a cup of grapes.

Dinner:

I’m happy to say that my aversion to vegetables is fading and I actually had a craving for roasted broccoli all afternoon, I couldn’t wait to eat it for dinner tonight! We had spaghetti and then I roasted broccoli in some coconut oil, sea salt and pepper.

Don’t mind the bump that got in the way of the pictures, that seems to be happening a lot lately.

Speaking of the bump, today is hump day, bump day! 28 weeks, 4 days.

And that wraps up my day! I’ll be finishing off the day with my current bedtime snack of a sliced apple and peanut butter. Exciting.

What I Ate Wednesday {7}

Hello, Hello! Just when I thought food aversions and other yuckiness associated with pregnancy was gone…it’s back with a vengeance. I have had a craving for baked potatoes and chicken for a few days and was so excited to cook that tonight, as you’ll see, that didn’t happen. My stomach has felt “off” all day long today. It’s only 7:15pm, but I’m ready to put the kids and myself to bed. Before that happens, let’s get to the WIAW party!

Breakfast:

This meal has been on repeat for about a week, it’s so filling and so delicious, I can’t help but eat it every morning.

Carbmaster yogurt with Fiber One Cranberry Almond granola and a sliced banana. Perfection.

Lunch:

I had an Endocrinology appointment this morning and on the way home I decided to treat myself to a lunch out. Thank you, Jimmy John’s.

This sandwich was SO good, I think it’s going to be dangerous for the rest of the pregnancy that Jimmy Johns is so dang close to us.

Dinner:

No chicken. Instead I toasted two waffles, slapped some crunchy nut butter and a sliced banana on top and called it a meal. I needed a little something extra, so I had another yogurt.

And because I have yet to finish and publish my 26 week bump-date, here is a picture for hump day, bump day (26 weeks, 4 days).

Marvelous in My Monday {7}

I can’t believe it’s been almost a week since I last posted. I had some really bad insomnia and was a walking zombie during the day, so getting online was kind of the last thing on my list. But I’m back with another edition of MiMM.

Marvelous is…under 100 days to my due date! The c-section hasn’t been officially scheduled yet, so I’m still going with April 19th until a date is set.

Marvelous is…this new Fiber One Cranberry Almond Granola.

I had some this morning with Strawberry Banana Carbmaster yogurt and a sliced banana.

All mixed up.

Marvelous is… a full week of school for the kiddies! Last Monday it was -40 and we were shoveling a foot of snow. Today it’s in the 40’s and everything is melting. I’m just happy to have a normal week around here!

Marvelous is…These Kashi bars I found on clearance the other day. They are the perfect mid-morning snack.

Marvelous is… The library opening up again! Last week due to the snow and ice, they had some plumbing and busted water pipe issues so they were closed for a few days. I am not an e-reader kind of person. I want real books, dang it!

I picked up these two books today, yep, from the Teen section. Don’t care. Sometimes you need a little light reading.

Marvelous is… the most epic lunch in a very long time.

On the bottom is a baked potato and it’s topped with salsa chicken (chicken breasts cooked in the crock pot covered in taco seasoning, chicken broth, diced tomatoes with jalepenos and black beans) and a little pepper jack cheese on top. This will be my lunch all week, I’m glad it tasted good, totally thrown together on the weekend.

Marvelous is…a local grocery store sent these in the mail last week.

After I picked up the oldest from school, we went and grabbed our bag full of goodies. I was surprised at how much was in there! Be still my heart, I’ve been craving a pineapple for days. Can’t wait to cut into this beast!!

Now it’s time for an early dinner, showers for the crew and then off to the 6th Grade Orchestra concert. My oldest plays the Cello and he’s been practicing so hard for this concert.

365 Days of Happy

Yesterday I posted some goals I had for myself in 2014 and was pretty satisfied with those. Then, I started catching up on blogs and read this post on Running with Spoons…I was instantly intrigued. I told my Husband about it and he immediately thought it was a good idea. I’m the person who can always point out the negative first instead of finding the good in a situation. It’s something I really need to work on. So, I’m adding one more goal to my list for 2014: Finding the happy in every day.

Every day I will make a note of something, anything happy or good that happened that day, no matter how big or small. I’m sure some days will be harder than others (especially for me), but I’m determined to do this!

Let’s get on to today’s meals. I woke up this morning with a fasting blood sugar of 84, I was pretty excited, given the past few days indulgences.

Breakfast:

Egg sandwich

And my current obsession, grapefruits. Thankfully these are on sale, because I can’t get enough of their tangy deliciousness.

Lunch: The most random/yet delicious combo of foods of all time. A brown rice wrap with roasted garlic hummus and sharp cheddar cheese and a chicken egg roll I found in the freezer.

Dinner: We are pretty much snowed in today. It started snowing last night and hasn’t stopped. The roads are craptastic, and while I would have loved to have dinner with my mom, sister and niece tonight, I didn’t feel like driving…so we all found something to eat. I chose oatmeal topped with crunchy peanut butter

And the other half of my grapefruit.

Are you a glass half full or half empty person? Want to join in on the 365 days of happy, join in!

What I Ate Wednesday {5}

5 in a row, it’s a Christmas miracle! Once again, another WIAW is upon us. I typically post at night, but once I pick up everyone from school, we are headed to my mom’s house for dinner. I’m not sure when we’ll be home, so I’m putting the post up a little bit early today.

Breakfast:

Simple, but delicious. Oatmeal topped with vanilla stevia and crunchy nut butter.

Yogurt on the side.

Snack:

Pineapple (SO juicy and flavorful!!!) and some sharp cheddar cheese.

Lunch:

My BIL smoked a turkey for us the other night, so I have been feasting on the leftover turkey meat the last couple of days, today I wanted something different. I turned it into one epic grilled cheese/turkey sandwich.

More pineapple on the side…

Don’t forget to head over to Peas and Crayons for more WIAW entries!!

Hump Day, Bump Day!

22 weeks and 4 days. My 11 year old wanted to take the pictures this morning. Baby girl is running out of “up room,” pretty soon she’ll just be growing out.

What I Ate Wednesday {4}

It’s that time of the week again! I love this day on my favorite blogs, so many new ideas to add to our menus! Let’s get right to it.

Breakfast: It has been COLD here the last few days. I would much rather have this though, then sweating in 100 degree weather. It’s always easier to add more layers, but there’s only so much you can take off. This morning I had oats with crunchy nut butter and then a yogurt.

Lunch: I went to a friend’s house for a brunch which turned into my lunch, my contribution was this yummy egg and canadian baked dish and hash browns. We also had some blueberry muffins that were incredible. It just a laid back morning and we sat around and talked while their kids played and I snuggled with the sweet little 6 month old that was there. I can’t believe I’m going to have a little baby again…and soon!

Snack: My favorite; the mug cake. I have mentioned this so many times over the last week, but I’m not kidding, I ate least have this every other afternoon.

Dinner: Spaghetti! I  needed some vegetables in me (and baby girl) tonight, so I added a cup of steamed broccoli.

Ending with the hump day bump day picture, here we are at 21 weeks and 4 days.

Don’t forgot to check out everyone else at Peas and Crayons for more WIAW posts!
