I haven’t participated in awhile, but since my posts are pretty much once a day now that my sister has joined with me, I am excited about doing WIAW posts again!
Breakfast was 2 hard boiled eggs, toast and a banana
And my new morning ritual; hot lemon water
Lunch was leftover salad from the night before. I put it in a mason jar in the fridge and was surprised that it stayed crisp, normally I despise leftover salads because everything gets all soggy, but this was like I had just made it. Mason jars, for the win!
And an orange
After T and K got out of school, we headed over to the park for some fun in the sun. I’ve tried many coconut waters over the last couple of years, and really have not been a fan. I spotted a new one in Target the other day and decided to give it a try.
I am in love. I drank this as fast as I could, I was kicking myself for not buying more!!
I mentioned earlier, that I went to Trader Joe’s for two things this morning, and one of the extras I picked up was this salad dressing.
Sorry, it’s pretty blurry, but you get the idea. I have seen this around on the blogosphere, but always forget to pick up my own bottle…today I remembered and I’ll never go without it again.
I’m not a real big salad lover, but this dressing has changed me. For good. I wanted to lick my plate.

Along with my salad of dreams, I had a rice bowl with an egg and loads of hot sauce.
Total winner of a lunch in my book!
Dinner was a family favorite: steak fajitas.
The glob on top is one of my guilty pleasures. It’s probably horrible for me, but as I’m learning in Weight Watchers, nothing is off limits and believe me when I say I used to eat triple that amount before Weight Watchers. The ultimate in guilty pleasures; Tostitos Queso Dip.
I’ve been waiting for the husband to come home so we can watch the one show we like to watch together; Revenge. It was finally a new episode last night and I can’t wait to watch it!

You’ll have to forgive my craziness over the past 24 hours. I tried to self-host, but let me just tell you I was nuts for even thinking it and I’m happy I have my money back. This may change in the future, but for now. I’m staying here…and I hope everyone can see this post.
Ok, now that I got that out of the way, I’ll be re-posting two posts from earlier that were supposed to go up, but the site kept crashing. Yay.
It wasn’t too long ago, where tofu was just a strange blob of goo and I was certain I would never eat it unless I didn’t know I was eating it. Once I learned the art of pressing tofu, my whole world changed and now I eat it all the time. The key to liking tofu:
- Buy extra firm
- PRESS the water out. I don’t have a fancy presser, so I cut it into slabs, cover with dish towels and use my heaviest cutting board (at least 2 hours, but the longer, the better.
- Marinades! I love mixing different things to marinate the tofu in, it’s a blank slate.
I pressed my tofu, and then marinated it in bbq sauce, dijon mustard and a little apple cider vinegar to thin it out and let it marinade over night. Yesterday for lunch, I took out a slab and baked it in the toaster oven for about 5 minutes, then cranked it up to broil and let it go, I turned it every few minutes until it was nice and crispy on the outside.
It was still slightly tender on the inside, but for a texture freak like myself, it was perfect.
This was the perfect addition to my salad and I also had another slab with roasted potatoes last night.
I found a bag of panko crumbs in the pantry today, I am thinking of doing something with those to make these really crunchy on the outside..stay tuned!!

…but before we get to that, I started my morning with 30 minutes of Walk Away the Pounds, earning myself 2 activity points. Shortly after that, I took the advice of all of you from my other posts and had a small meal.
- 1/2 cup of Cheerios (1 P+)
- Banana (0P+)
- Mug ‘o pumpkin spice goodness
A few hours later I had my second breakfast
- Egg White (1P+)
- Whole Wheat English Muffin (3P+)
- Canola Oil (1P+)
- Weight Watchers swiss cheese wedge (1P+)
- Trader Joe’s Hot and Sweet Pepper Jelly (1P+)
- Apple and cinnamon (oP+)
For the first time in a very long time, I’m not starving all day long. I’m satisfied and actually enjoying my meals.
Lunch was an epic salad, probably the best one I have ever made.
- Romaine Lettuce (0P+)
- Bell Peppers (0P+)
- Cucumbers (0P+)
- Baby bella mushrooms (0P+)
- Brussels sprouts (0P+)
- 1/3 cup Feta Cheese (4P+)
- Trader Joe’s Veggie Masala Burger (3P+)
- Wish Bone Balsamic Vinaigrette (2P+)
This salad was so incredible, all the different flavors were on display and the dressing added just the right touch. I didn’t realize my feta cheese would have so many points, so next time I’ll cut it back or use something else.
